Shredded Chicken Tacos

I am fearful to admit something to y’all for fear that you will think I am lame. I love crockpots. Cason and I recently discovered them and it has basically changed our lives. Crockpots scream families and soccer practice, not two single, twenty-something’s living on their own. I got over the labels really quick when I realized how genius the crockpot really is…no wonder mom’s love it! I love how you can prepare your meal the night before, then plug-in the crockpot and dinner cooks while I’m at work. It’s brilliant. We’ve been playing around with tons of different recipes but our most favorite discovery so far has been chicken tacos. When I realized I was posting on Cinco de Mayo, I just knew I had to share the recipe with you. I had the girls over for a pre-Cinco celebration to document this fantastic meal. I served my fiesta up right and topped it off with margaritas and guacamole (and a Piñata too)…best blog meeting we’ve had so far!

Shredded Chicken Tacos:

:: 1 pound chicken breast
:: 1/2 cup of salsa
:: the juice of 1 lime
:: 1 cup chicken broth
:: 1 packet of taco seasoning
:: 1/4 cup minced onions
:: 2 garlic cloves

Here’s how easy it is: Put everything in the pot. Honestly, I have no set time for how long to cook the chicken. We plug it in around 8:30am and cook the chicken on low. By the time 6pm rolls around it’s perfectly seasoned chicken. The chicken is so tender it’s basically falling apart. I always use two forks to shred it for the tacos.
